Hash Brown Quiche

This will be a surprise to you as to how this is put together.

It's great for dinner, as well as, brunch. YUM!

A great time saver - so easy - quite versatile!

Recipe: Serves 8

16 oz. organic frozen hash browns

7 organic or pastured eggs

1 cup organic grated cheddar cheese

1 1/2 cups organic frozen spinach

1 organic small onion - diced

2 3/4 cups organic milk

2 tbsp. dried chives

1 1/2 tsp. ground coriander

1 tsp. lemon pepper

1/4 tsp. garlic powder

Note: I do not add salt to this recipe. It really is

in an individual's preference to add before they eat it.

2 - 9 inch glass pie pans - liberally buttered

Preheat over to 350 degrees

Divide the frozen hash browns between the dishes.

Spread them across the bottom and up the sides.

Next sprinkle 1/4 cup of cheese in each and then add the onion.

Add the frozen spinach and then the rest of the cheese.

In a medium mixing bowl, whisk the eggs for about a minute, then add the seasonings and milk. Whisk together, then pour over the quiche.

Bake for about 50-55 minutes. Enjoy!

Tips of substitutions:

1. 13.5 oz can organic coconut milk & water can be substituted for the milk.

* This does not make it have a coconut flavor. It has no different flavor

than if you used the milk. It's a mystery! *

2. Any fresh or dried herbs of your choice can be used.

3. Frozen broccoli can be used instead of spinach, as long as they are small.

4. Goat cheese or feta cheese can be used instead of cheddar cheese.

5. If you have any leftover potatoes from other meals - such as au gratin, scalloped, baked, or roasted - you can roughly mashed them up a bit and use them in place of the hash browns. Be creative!

Note: I have also prepped this a day or two in advance and put into refrigerator. It might need to bake 5 - 10 minutes longer.
