Honey Mustard Grilled Chicken Breasts & Red Lentils
Succulent grilled chicken drizzled with a spicy sweet sauce.
The red lentils are mild with a slight sweet and nutty flavor. This dish will not disappoint!

Recipe: Prep time: 35-40 min. Serves 6
3 organic boneless, skinless chicken breasts
Grape seed oil - expeller pressed
Sauce: 1/4 cup raw honey
4 tbsp. organic yellow mustard
1/4 tsp. lemon pepper
1/2 tsp. Himalayan salt
Lentils:
1 1/2 cups organic red lentils
1/2 cup organic coconut oil
3 tbsp. organic soy sauce ( San-J reduced sodium)
3 cups water
Prepare honey mustard sauce by whisking all ingredients
into a bowl and let sit.
Preheat grill
Place chicken into a bowl and drizzle grape seed oil on
the chicken and stir to coat.
Place on grill. Grill on one side for 8 minutes.
Use tongs to turn - do not stab with a grill fork to turn!
Put lentils into pan, add the coconut oil, soy sauce, and water.
Put a lid on the lentils. Bring to boil and boil for about 3 minutes
and then shut off heat and let sit.
After chicken has cooked for 7 more minutes, then pull off grill
and place on cutting board and cover with a lid or dish and let
rest for 10 minutes. ** this grilling time will vary some as it depends
on the size of your chicken. Mine took 15 minutes total.**

Slice chicken and place on plate and drizzle with honey mustard sauce. Lentils are ready to serve. Enjoy!

Note: Red lentils were a surprise for my family. They really are very tasty
on their own. When I started making them, I only added water, but later
on I decided to add some soy sauce for a bolder flavor.
You could also add a splash of balsamic vinegar or red wine vinegar.
