Chocolate Coconut Crunch Ice Cream

Rich chocolate with such a creamy texture and just the right amount of a light crunchy surprise!

The bowl is never big enough! Yum!

Recipe: Serves: 8 people - 3 times

4 1/4 cups of organic coconut milk

3 cups organic heavy cream

2 cups organic milk

6 organic or pastured eggs

1 cup organic cacao powder

2 3/4 cups raw honey

3 large dashes of organic vanilla extract

1 1/2 cups organic coconut oil

Optional: 1 - 2 tbsp. organic mint extract - depends on how strong

you want the flavor.

Place 6 qt canister and turner in the freezer several hours ahead of

time or overnight.

Mix the first 7 ingredients well by placing into a blender - or use a

hand mixer and blend well in a large mixing bowl.

Pour into frozen canister and start to churn. After 10 minutes,

then take the top off and pour in the coconut oil. Quickly, place

the top back on and churn until soft serve consistency.

Put into containers with lids and freeze. Enjoy!

Tip: The coconut oil actually gives the crunch, but it does not

taste like oil at all. It really does actually taste like chocolate bits!
