Raw Energy Balls
Such a healthy snack that is so easy to add a lot of
nutrition together and taste so good. My children love these!
Recipe: Prep: 30 minutes Yields: approx. 20-22 balls
2 cups organic dried dates -pitted (approx. 16 pcs. per cup)
1 cup organic dried Smyrna figs - (approx. 12 pcs.)
2 tbsp. organic chia seeds
1/2 cup organic shredded coconut
1/2 cup organic peanut butter
3/4 cup organic coconut sugar
5 tbsp. organic cacao powder
4 tbsp. raw honey
2 tsp. organic vanilla extract
1st coating bowl:
1/4 cup organic almonds - chopped in food processor
1 tbsp. organic coconut sugar
2nd coating bowl:
1/3 cup organic shredded coconut
In a food processor, add the dates and figs and blend well.
Then add in the next 7 ingredients and blend well.
Using your hands, roll mixture into balls and then dab/roll the balls into
the coating bowls. Enjoy!
