Turkey Apple Sausage with Coconut Gravy

Yum! The flavors will surprise you. A delicious breakfast or dinner.

Recipe: Serves 12 sausage patties

Sausage:

2 lbs. organic ground turkey

1 cup organic celery - finely diced

1 medium organic red onion - finely diced

2 cups organic shredded apple - I used Fuji

1 tbsp. Garam Masala

2 tsp. organic garlic powder

2 tsp. organic rubbed sage

1 tsp. organic thyme

1 tsp. organic lemon pepper

1/2 tsp. organic ground turmeric

1 1/2 tsp. Himalayan salt

organic extra virgin coconut oil

Gravy:

1/2 organic butter

1 tsp. organic cinnamon

1 1/2 tsp. organic rubbed sage

1 tsp. organic thyme

1 1/2 tsp. organic garlic powder

1 1/2 tsp. organic ground coriander

1 tsp. organic lemon pepper

1 1/2 tsp. Himalayan salt

1/2 tsp. white pepper

1/3 cup organic whole wheat flour (chemical free)

13.5 oz. organic coconut milk

2 cups organic chicken stock

1 cup water

In a medium bowl, add the turkey and all the ingredients for the

sausage and mix well.

With your hands, form patties about 3" x 3" and put onto a plate.

Use wax paper to separate each layer.

Note: This will be sticky. Try to be as "light" as possible and use the

cups of your hands to form and then use your finger tips to finish.

When you add them to the skillet, you can adjust the shape with your

finger tips.

In large skillet, to make a roux, melt butter and let bubble for 2 minutes. Then add in the seasonings and flour and whisk well.

Let bubble for about 3 minutes.

Add the coconut milk, stock, and water, as you whisk quickly to incorporate.

Once this is thickened, then turn off heat and cover.

Place a medium skillet over medium high heat and add 2 tbsp. of coconut oil.

When the oil is heated sufficiently , then add 3 - 4 sausage patties.

Fry for 3 minutes and then turn and fry 3 minutes more.

Place on a sheet pan and put into a toaster oven to keep warm (200 degrees) while you continue to fry the rest of the patties. Add more oil as you need.

Plate sausage and spoon on some gravy. Enjoy!
