Slow-Cooked Curried Chicken, Peas & Coconut Rice Blend

Such an easy meal to put together and bring a complex of flavors to your table to enjoy.

Recipe: Prep: 4 hours Serves 8-10

5 - 6 organic boneless, skinless chicken breasts

3 cups organic wild rice blend (Lundberg)

5 1/2 cups organic chicken stock (collagen)

13.5 oz. organic coconut milk

5 tbsp. organic extra virgin coconut oil

4 tbsp. organic lime juice

2 tbsp. organic fresh ginger - finely minced

1 tbsp. organic garlic - finely minced

4 tsp. organic curry powder

1 tsp. organic turmeric

16 oz. organic frozen peas

6 qt crock pot

Rinse the rice well. In the crock pot, add the ingredients in this order:

Rice

Lime juice

Coconut milk

Stock

Coconut oil

Seasonings

Chicken

Put lid on and cook on high for about 3 1/2 hours.

Note: Check to see if rice is done. It should be at this time.

Set the crock pot to the warm setting.

Then take out the chicken and cut up into bite size pieces.

Put peas into the rice mixture and stir through.

Place chicken back into the crock pot and stir all to incorporate.

Put lid back on and let set for about 15 minutes.

The peas will cook through in this time period. Plate and serve. Enjoy!
