Apple Spice Ricotta Muffins

So delicious! My children were eating these faster than I could make them.

Recipe: Yields approx. 40 muffins

4 pastured or organic eggs

1/2 cup raw honey

3 1/2 cups organic coconut sugar

2 cups organic ricotta cheese

2 tsp. organic vanilla extract

4 tsp. pumpkin spice

1 1/2 tsp. Himalayan salt

1 cup organic extra virgin coconut oil - melted

1/4 cup organic butter - melted

1 cup organic flax seeds - freshly ground

4 cups organic whole wheat flour - chemical free

4 tsp. baking powder - aluminum free (Rumford)

1 tsp. baking soda

1 1/2 cups water

4 organic apples - cored and diced (do not peel)

Tip: I slice them about 1/8" and then dice them

extra organic coconut sugar - for sprinkling on top muffins

Preheat oven to 350 degrees.

In mixing bowl, beat eggs for about 2 minutes on high. Add in the

next 6 ingredients and mix well. Then add in the next 3 ingredients

and mix well. Add in the flour and leavenings and mix through.

Add in the water and apples and mix well.

Fill muffin cups 3/4's full and sprinkle some coconut sugar on top with

a tsp. Bake for 20-25 minutes. Let cool some and serve warm. Enjoy!
