Pa. Dutch Beef & Egg Noodles

A hearty dish of braised beef and homemade egg noodles, immersed in a rich delicious broth.

Recipe: Serves 8-10

2 - 3 lbs. grass-fed rump roast

2 large organic onions - chopped

2 tbsp. organic garlic - minced

4 tsp. organic dried rosemary - freshly ground

(can use fresh rosemary - minced - 2 tbsp.)

1 1/2 tsp. lemon pepper

1/4 cup organic soy sauce

3 large organic bay leaves

2 tsp. Himalayan salt

3 tbsp. organic extra virgin coconut oil

water to cover

Noodles:

3 pastured or organic eggs - beaten

2 cups organic whole wheat flour - chemical free

1 tsp. organic ground celery seed

1 1/2 tsp. Himalayan salt

1/2 - 3/4 cup water

16 oz. organic frozen peas

Optional: 3 - 4 tbsp. butter & 1/3 cup flour - for thickening

6 qt. crock pot

Heat up a medium skillet with the coconut oil until hot.

Then sear the roast on front, back, and sides.

Place roast into crock pot and spat out oil on top.

Put onions all around roast. Apply seasonings on top of roast.

Pour enough water into crock pot til it is 3/4's full.

Put on low setting for 10 - 12 hours.

When the roast is done, then pull out and shred with a fork.

The meat will have that "fall apart" succulence.

Remove bay leaves from crock pot. Return meat to crock pot

and stir through. Keep crock pot on low setting.

Next, make noodles by placing flour, salt, and celery seed in small

bowl and mix through with a fork. Then add in the eggs and mix

through. Add the water in gradually, until the texture can be worked

into a ball - like bread dough.

Note: The flour you choose to use will determine how much water you

will need.

Place dough onto a lightly floured surface and knead a little to form a

smooth ball. Cut in half and form each into a ball. Working with one

ball, roll out into a rectangle, as best you can, as thick as you would like.

Using a crimper or pizza cutter, then cut into strips the length of the

rectangle - about 1/2 inch widths and then cut those into 3 inch lengths.

Drop one at a time, into the hot broth. As you cover the surface, use

a large spoon to stir through and repeat, until you have added all the noodles,

or at least as much as you would like.

Tip: The noodles do thicken up the broth some, but if you would like it to be thicker then use the butter & flour option by mashing them together with a fork and then add this into the hot broth and stir.

This is a way to thicken up any soup, stew, or sauce without having lumps appear.

Turn off the crock pot. Then add in the peas, stir through and cover.

Let sit for 15 minutes as the peas cook in the hot broth. Enjoy!
