Skillet Tamarind Sausage & Veggies

Springtime brings fresh asparagus to our garden, which motivated me to put this dish together.

Sweet Italian chicken sausage with a medley of fresh veggies and finished with a special tamarind sauce.

Recipe Prep 20 minutes Serves 7-8

8 links of organic sweet Italian chicken sausage (Trader Joe's)

-- sugar free and no pork casing--

2 handfuls of organic asparagus spears - cut into 1/3's

2 cups organic carrots - cut into 1/8 inch half crescents

1 large organic red bell pepper - cut into 1/4 inch slices and then halved

1 large organic red onion - cut into 1/4 inch slices and then halved

4 tbsp. organic extra virgin coconut oil

Sauce:

2 tbsp. organic tamarind paste

2 tbsp. organic Dijon mustard

2 tbsp. organic garlic - minced

1/2 tsp. organic ground turmeric

1 tbsp. raw honey

1 tsp. Himalayan salt

Place carrots into a medium skillet with a little water and lightly

steam, until tender.

Place coconut oil into large skillet over medium high heat.

Cut sausage links into 1/2 inch rounds and add to the skillet.

Add in the onions. Saute' for about 5 - 7 minutes.

Add in the bell peppers and asparagus and continue to saute for about

5 minutes more. Add in the carrots.

Mix the sauce in a small bowl and then add to the skillet and stir

through well. Cook for another minute or so and then turn off heat.

This can be served over quinoa, rice, millet, or couscous. Enjoy!
