Cheesy Chicken, Sun-dried Tomato, & Spinach

This is probably the best sauce that I have ever eaten over pasta - incredible flavor! You will have to pull back on the reins because you won't be able to eat as much as you would like too!

Recipe Prep 30 min. Serves 7-8

6-7 organic chicken thighs - boneless & skinless

8.5 oz organic sun-dried tomatoes in oil

1 medium organic onion - finely diced

Sauce:

5 - 6 cloves organic garlic - minced

3 tbsp. organic mustard

3 tsp. organic smoked paprika

1 tsp. organic lemon pepper

1 1/2 tsp. Himalayan salt

2 cups organic sour cream

1/2 cup organic cream

16 oz. organic spinach - chopped

2 cups organic Romano cheese (from Italy) - freshly grated

Pasta of choice.

In a large skillet, pour all the oil from the tomatoes and turn heat

to medium high and saute the chicken thighs.

Heat water in a large enough pot for the pasta.

Chop the tomatoes and put aside on cutting board.

When the chicken is done, then remove from pan and place on

cutting board to rest for 5 minutes. Then cut into bit size pieces

or into slices.

Cook pasta and then drain.

In the pan, then add the diced onion, tomatoes, the seasonings, spinach,

and the two creams. Mix well. Add in the chicken. When this is

heated through, then add in the cheese.

Serve over pasta. Enjoy!

Tip: If you do not want to serve with pasta, then you can leave

the thighs whole and just eat with the sauce.

Chicken breasts or tenderloins could also be used.
