Baked Seasoned Onion Rings

My family loved these even better than the fried version.

A few different and healthier ingredients such as tasty biscuits, instead of bread crumbs adds to better flavor.

And no oil splatter mess to clean up.

Recipe Prep 1 hr. 15 min. Serves 6 - 8

6 - 7 large organic onions - sliced thick

Egg wash:

3 pastured or organic eggs

1/2 cup organic sour cream

1/3 cup water

Flour dredging:

1 cup organic whole wheat flour - chemical free

1 tbsp. organic smoked paprika

3/4 tsp. organic lemon pepper

2 tsp. organic garlic powder

1 1/2 tsp. Himalayan salt

Breading:

2 cups organic flax - freshly ground

3 cups organic biscuits - ground into crumbs

Tip: I used biscuits that I made with a large amount of organic extra virgin coconut oil, which gave these onions rings a nice crispy coating, as well as, good flavor. I didn't need to add anymore oil to this recipe. I also added

chives to the biscuits.

Water bowl

Dipping Sauce:

2 cups vegenaise mayo - soy free and canola oil free

2 tbsp. organic mustard

2 tbsp. organic horseradish sauce * see my recipe here*

5 tbsp. organic red wine vinegar

2 tsp. organic garlic - minced

1 1/2 tsp. organic smoked paprika

1/2 tsp. organic lemon pepper

1/2 tsp. Himalayan salt

2 large stainless steel sheet pans with parchment paper

Preheat oven to 425 degrees

This is a three step process, so being organized and set up properly before

you begin makes it so much easier, as well as, cleaning up afterwards.

You will need three forks for each stage and maybe a spoon to help you.

In alignment: 1. onions 2. water bowl 3. flour 4. egg wash 5. breading

Proceed to place several onions into the water bowl, then take out 2 and place

into the flour. Using a fork, dredge the onions through the flour, then remove

and place in the egg wash and again, coat completely and then place into

the breading. Coat again completely and place onto the sheet pan.

Continue this process until you fill the sheet pans. You can place smaller

onion rings inside bigger ones to have more space. Bake for about 20 minutes.

The rings will be brown and the coating hard.

As the rings bake, then make the sauce by adding all the ingredients into

a bowl and whisk together well.

When all the rings are done, then serve with sauce. Enjoy!
