Spice Spirals

Deliciously chewy with just enough sweet spice and a buttery finish! Great for tea-time or coffee or a fun gathering.

Recipe: approx. 40-45 cookies

1 cup organic butter - softened

8 oz. organic cream cheese (at least rBST free)

3 cups organic whole wheat flour (chemical free)

1 cup maple syrup

2 tsp.Himalayan salt

large dash of organic vanilla

filling: 1 cup organic coconut sugar

2 tbsp. cinnamon

4 tsp. nutmeg - freshly ground/grated

Using a food processor, beat cream cheese about 30 seconds and then

add the butter, maple syrup, salt, and vanilla. Beat until smooth, scraping the sides to insure all is blended well. Add flour and blend well.

Then put dough onto a sheet of plastic wrap and form into a rectangle.

Wrap and refrigerate for about 1 hour, until dough is firm enough to

roll.

Note: You can put this in the freezer for about 30 minutes, but I don't

think it works very well, as the edges get harder than the inside and then

you can't roll it out decently.

Take out dough and roll into a large rectangle on lightly floured surface.

Evenly sprinkler the filling mix over the dough.

Then start at the side furthest from you and roll towards you. .

Lightly brush some water on the last edge to seal the roll. Cut the log into several large pieces and then place pieces onto a sheet pan and cover with plastic wrap. Refrigerate for 2 hours or put into the freezer for 45 minutes.

Tip: You can let this sit in the refrigerator for a day or two before continuing. Which makes this a great option for gatherings. Once you pull

it out, it only takes about 30 minutes to finish.

Preheat oven to 400 degrees. Prepare stainless steel sheet pans with

parchment paper. Using a large sharp knife or the edge of a dough

scraper, cut the roll into 1/4 inch thick slices. Place on sheet pan,

about 1/2 inch apart. Bake for about 18 minutes. Enjoy!
