Ciliegine Salad
Fresh spinach, basil, cherry tomatoes, and ciliegine mozzarella balls with a light lemony vinaigrette.
Pairs well with sandwiches and grilled entrees.

Recipe: Prep: 20 minutes Serves 8
6 oz. fresh organic spinach
8 oz. fresh ciliegine mozzarella balls - quartered
12 oz. fresh organic cherry tomatoes - halved
2 handfuls (approx. 3 oz) fresh organic basil - julienned
Vinaigrette - 2 tbsp. organic extra virgin olive oil
3 tbsp. organic lemon juice
1 tsp. ground coriander
1/2 tsp. Himalayan salt
1/2 tsp. lemon pepper
Mix all salad ingredients in a bowl. Whisk vinaigrette in smaller
bowl and then add to salad, mix thoroughly. Enjoy!
Note: Julienned basil: Make small bundles by stacking leaves on top
of each other and then roll them into a small log shape and then thinly
slice with a sharp knife into 1/8 inch strips. Then cut those strips in half.
