Cucumber Feta Salad

Cucumbers are always refreshing! This medley of flavors

is a great addition to a grilled entree or a sandwich.

Simple and tasty!

Recipe:

2 organic cucumbers 1 organic medium red onion

4oz. fresh feta cheese organic balsamic vinegar

100% extra virgin olive oil OR cold pressed avocado oil

(Primal Kitchen brand)

1/2 tsp.ground coriander 1/2 tsp. lemon pepper

Himalayan salt or sea salt

Slice cucumbers in halves or quarters (your preference). Cut red onion

in half and then thinly slice. Cut slices in half.

Mix both together in bowl. Mix in coriander and lemon pepper.

Slice the feta cheese into 1/4 inch layers and then slice those layers

into 1/4 inch and then diced them.

I didn't give a measurement for the oil and vinegar as I just do

a drizzle over the cucumbers and then stir it all together.

Sprinkle the feta cheese on top and lightly stir in to the salad.

As for the salt, I just grind a little over it. Enjoy!

Tip: Don't put the vinegar and oil into the salad until ready to serve,

so the salad stays crisp.
