Southwest Corn, Bean, & Rice Salad
A very nutritional combination full of flavor and color!
A great side dish to go with fajitas, enchiladas, quesadillas,
or grilled skewers.
Recipe: Prep 20 minutes Serve 8
1 1/2 cups organic brown basmati rice - already cooked (in chicken stock)
25 oz. can organic black beans - drained
16oz. organic corn - cooked
3-4 organic garlic cloves - minced
1 organic red bell pepper - diced
1 organic red onion - diced
3/4 cup organic cilantro - chopped
1/2 tsp. ground cumin
1/4 tsp. chili powder
1/2 tsp. lemon pepper
1 tsp. ground coriander
2 tsp. smoked paprika
1/2 tsp. Himalayan salt
1 organic lime cut into quarters
Combined the first 12 ingredients in a bowl, except only add 1/2 cup of
the cilantro. Once everything is combined, then transfer to a serving
dish and squeeze lime juice over top and sprinkle the remaining cilantro
on top and serve. Enjoy!
