Chicken Taco Sliders

Zesty flavor! This meal brought a few accolades and yet, very little time and effort was involved. Great to pair with

either the Southwest Cheesy Rice and Corn Casserole or the Southwest Corn, Bean, and Rice side dish.

Recipe Prep: 20 minutes Serves: 8

3 - 4 cups organic chopped chicken - cooked

3 - 4 cups organic cheddar cheese - shredded

18 ct. organic taco slider corn tortillas

1 medium organic red onion - diced

2 cups organic minced fresh cilantro

Sauce:

1/2 cup organic salsa

1/2 cup organic sour cream

Preheat oven to 400 degrees

Mix salsa and sour cream together in a small bowl.

Prepare layers as follows onto stainless steel sheet pans:

Taco corn tortillas

Onions

Chicken

Cilantro

Sauce (approx. 2 tsp.)

Cheese

Bake for 10 - 15 minutes to heat through and melt the cheese.

Sprinkle more cilantro on top and serve. Enjoy!

Tip: This is one of those meals where the benefits of having baggies of precooked chicken (that had been cooked in a crock pot ahead of time and

divided up), really helps.

You can enjoy a great meal with very little time involved. Just pull the

baggie out a day or two ahead of time and place in refrigerator to thaw.
