Peanut Butter & Sunflower Seed Cookies

A traditional cookie of peanut butter flavor with the crunch of sunflower seeds.

Recipe: Prep: 1 1 /2 hours Yields approx. 44 cookies

1 - 16oz. organic peanut butter

1 cup organic butter - softened

3 organic or pastured eggs

2 1/2 cups organic coconut sugar

2 1/2 cups organic whole wheat flour (chemical free)

2 tsp. organic vanilla extract

2 tsp. Himalayan salt

2 tsp. baking soda

1 cup organic sunflower seeds

Preheat oven to 375 degrees. Place parchment paper onto 2

stainless steel baking sheets.

In mixing bowl, blend eggs well. Then add butter, salt, and vanilla

and mix well. Add coconut sugar and peanut butter and mix well.

Add flour with baking soda on top and mix well. Then add the

sunflower seeds and mix well.

Roll small balls (about 2 tbsp.) in hands and place on baking sheets.

Then using a fork, make two crisscross patterns on top of cookies.

Bake for 10-12 minutes. Let sit on sheet pan for 7 minutes and then

remove to a rack or sheet of parchment or wax paper to cook completely.
