Indulgent Creamy Mashed Potatoes

Rich and creamy! You will need self-restraint to not overeat!

Recipe: Serves 10

1 - 3 lb. bag of organic potatoes - red or yellow

1 cup organic butter

1 - 16oz tub of organic sour cream

2 tsp. Himalayan salt

1 1/2 tsp. organic freshly ground black pepper

Do not peel the potatoes! You want that nutrition!

Wash and cut the potatoes into 1 inch uniformed pieces

and place into a stock pot and cover with water.

Note: Cutting the pieces into the same size enables all

to cook evenly and the smaller the size will enable all

to cook quicker.

Bring to a boil and let cook until potatoes are soft - fork tender.

Drain the potatoes. Add butter and salt and pepper to

the pot and pour the potatoes over top.

Using a hand blender, begin to blend on medium speed,

through the potatoes until most are roughly mashed.

Then increase the speed to high and go through one

more time. Then add the sour cream and blend well. Enjoy!

Tip: You can add dried chives or garlic powder

or even roasted garlic.

You can also save the potato water for other recipes,

such as any dough recipe (creates softness) or add with

stock for a highly nutrient rich drink or soup, or add

to casseroles.

I like to eat leftovers for lunch - delicious!
