Caraway Vinaigrette Slaw

A tasty vinaigrette version rather than the traditional cream sauce. Partners well with meatballs, sandwiches, and grilled entrees.

Recipe Prep: 15 minutes Serves 6

1/2 head of organic green cabbage - grated

2 organic carrots - grated

1 large organic bell pepper - sliced into 1 1/2" length x 1/8" sides trips

1 organic cucumber - sliced into thin 1 1/2 " length x 1/8" wide strips

1/2 medium organic red onion - finely sliced and cut into halves

large handful of organic cilantro - diced

1 tbsp. organic ground caraway seed - freshly ground tastes best

1 tsp. organic ground celery seed

1 tsp organic ground coriander

1/2 tsp. organic lemon pepper

1/2 tsp. Himalayan salt

6 tbsp. organic red wine vivegar

5 tbsp. organic extra virgin olive oil

In a small bowl, mix the seasonings and vinegar and oil together,

whisking well. In a medium bowl, mix the vegetables together well.

Pour vinaigrette over the vegetables and stir well. Enjoy!
