Chicken Coconut Miso Soup

Tender chicken with leeks and carrots and whole wheat Capellini pasta, immersed in a rich delicious broth of red miso, ginger, garlic, lime, coconut milk, and soy sauce. Easy with little effort involved.

Recipe: Prep: 2 1/2 hours Serves: 2 meals

1 whole organic chicken - skinned

8-9 cups organic chicken stock

2 - 13.5 cans organic coconut milk

Juice from 2 organic limes - freshly squeezed

1 large organic leek - cut into 3/16 slices (both green and white parts)

1 medium organic onion - diced

3 cups organic carrots - cut into 1/8 inch round slices

4-5 cloves organic garlic - minced

2 tbsp. organic ginger - minced

3 tbsp. organic red miso - *Miso Master brand is very good*

3/4 cup organic soy sauce

4 tsp. organic ground coriander

2 tsp. organic lemon pepper

1/2 tsp. white pepper

1/2 tsp organic chili powder

16oz. organic whole wheat Capellini pasta - broke into 1/4 inch sections

1 cup organic cilantro leaves (per each meal) - can be chopped

Put chicken into crock pot and fill with water and cook on

high heat for 2 hours.

Steam carrots in a little water, in skillet, until tender.

When chicken is done, then remove to cutting board to cool some.

Skim off any fat from surface of stock.

Note: You can either continue to use the crock pot or transfer

the stock and chicken to a dutch oven/stock pot.

Whisk the miso with a little of the stock to blend well.

Measure out the stock - the amount will depend on the size of

your pot.

Pull the chicken meat and add all the ingredients together

- except Capelline pasta - in the pot of your choice.

Then heat until hot and then add the pasta.

This will only need about 5-7 minutes to cook.

Ladle into bowls and sprinkle with cilantro. Enjoy!

Tip: To make collagen, put the chicken bones into a crock pot

and add several garlic cloves, a few small celery stalks, several

halved onions and add enough water to cover. Cook on low

overnight - about 12-18 hours.

Use in soups, sauces, gravies, rice, millet, quinoa, etc.
