Mini Zucchini, Beef, & Cheddar Quiches

We really enjoy these delicious mini quiches!

The method of preparation allows a variety to be made

at one time, with ease.

Recipe Prep 25 minutes Serves 12 mini quiches

1 cup organic grass fed ground beef - cooked

1 - 1 1/2 cups organic zucchini - grated

1 - 1 1/2 cups Irish cheddar cheese - Dubliner

6 pastured or organic eggs

1 cup organic milk or half & half

1 1/2 tbsps. organic chives - chopped

1/2 tsp. organic lemon pepper

small pinch or 1/8 tsp. organic white pepper

1/2 tsp. organic garlic powder

1/2 tsp. Himalayan salt

12 cup stainless steel muffin tin - liberally buttered or with coconut oil

Preheat oven to 375 degrees.

In medium bowl, combine eggs, milk, and seasonings, whisking well

for about 2 minutes.

Place a large pinch of each of zucchini, beef, and cheese in each muffin

cup. Pour enough egg mixture in each until almost to the top of cup.

Bake for 15 minutes. Enjoy!

Options: Broccoli, cauliflower, or spinach

Chicken or turkey sausage

Feta, goat, or Asiago, Romano, or Parmesan cheeses
