Apricot Ginger Raisin Salad
A rainbow salad layered in a medley of nutrient rich vegetables,
with a final topping of raisins and sunflower seeds and finished with a delicious apricot ginger dressing.
Recipe Prep 15 minutes Serves 6 -7
Dressing:
1/4 cup Vegenaise mayonnaise - soy free, canola free
6 tbsp. organic red wine vinegar
5 tbsp. organic apricot fruit spread - sugar free
3 tbsp. organic ginger - minced
1 tsp. organic garlic - minced
1 tbsp. organic yellow mustard
1 1/2 tsp. organic ground coriander
1 1/4 tsp. Himalayan salt
1/2 tsp. organic lemon pepper
1 tbsp. organic chives - minced
Place first 9 ingredients into a blender and mix well. Add the chives
and pulse once and then pour into a serving cruet or bowl.
Salad: *choose your favorite ingredients - here's what I used*
organic spring lettuce mix of greens and reds - enough for medium platter
organic red and yellow tomatoes - handful each - halved
1 small organic red onion - thinly sliced and halved
1 large organic yellow bell pepper - sliced and halved
1 small organic carrot - grated
organic raisins - small handful
organic sunflower seeds - small handful
