One Pan Chicken Sausage & Roasted Potatoes
A really easy meal to make only using one sheet pan.
Roasted garlic potatoes with fresh rosemary, Italian sweet chicken sausage and sweet corn.
Recipe Prep 1 hour Serves 7-8
4 lbs. organic yellow potatoes ( red will work also) - cut into bite sizes
16oz. organic yellow sweet corn - frozen
16oz. organic sweet Italian chicken sausage - cut into halves
( no pork casing - Trader Joe's)
1/2 cup organic fresh rosemary - chopped
6 organic garlic cloves - minced
2 tsp. organic lemon pepper
1 tbsp. Himalayan salt - freshly ground
1/3 cup organic extra virgin coconut oil - melted
Stainless steel sheet pan - 17 1/2 " x 12 1/2"
Preheat oven to 425 degrees
Put coconut oil with seasonings into a large mixing bowl.
Add the potatoes and stir thoroughly well with a rubber spatula.
Transfer to sheet pan. Roast for about 25 - 30 minutes or until
the potatoes are almost fork tender.
Scatter sausage on top of the potatoes and then add the corn on
top of the sausage. Place back into the oven for about 15 minutes.
Plate and serve. Enjoy!
