Strawberry Lime Coconut Posset

Dairy-free! So creamy and delicious and perfect

for a summer dessert!

With lots of health benefits from coconut milk and oil,

raw honey, fresh strawberries and lime juice.

Recipe Prep: 20 min. Approx. 12 - 6 oz ramekins

2 1/2 cups organic coconut cream

(taken off of the top of 3 cans of organic coconut milk)

32 oz. organic fresh strawberries

2 tbsp. organic freshly grated lime zest (from 6 limes)

3/4 cup organic fresh lime juice

1 1/4 cup raw honey

1/3 cup organic extra virgin coconut oil

1 tsp. organic lemon extract

Place 3 cans of coconut milk in freezer upside down about 1 hour

before you want to begin recipe.

Clean strawberries and core strawberries.

Tip: The bottom of a spoon is a handy tool for this or just use

a paring knife.

Leave 12 small strawberries for serving and use the rest in the mix.

Tip: Can be served whole or cut about 4 small slices only 3/4 of the way through each strawberry and then fan it across each posset.

Note: Frozen and thawed strawberries could be used, although the

intensity of the flavor will be lacking.

The same goes for the limes. Bottled lime juice will lack that

wonderful fresh flavor.

Clean, zest, and juice the limes. You will use 2 tbps. of the zest in

the mix and use the little bit that is leftover for sprinkling on top of

each posset before serving.

Open the cans of the coconut milk carefully and scoop out the white

cream and put into a blender. Add the lime juice and zest, lemon extract, honey, and strawberries. Blend well. Then add in the coconut oil

and blend well again.

Pour into ramkins and place in the freezer to set up for about 1 hour.

Then remove and either serve or place in the refrigerator until ready

to serve. Decorate with strawberries and zest. Enjoy!
