Pecan Sticky Buns

A quicker yeast-free version of gooey, sticky, soft breakfast buns full of delicious buttery caramel and pecan flavors. YUM!

Recipe Prep 1 hour Serves 8

Dough:

3 1/2 cups organic whole wheat flour - chemical free

1/2 tsp. baking powder - aluminum free - Rumford

1/2 tsp. Himalayan salt

4 tbsp. organic butter - cold, cut into tbsp.

1/4 cup organic extra virgin coconut oil

1/2 cup ice water

2 tbsp. organic raw unfiltered apple cider vinegar

Filling:

1/2 cup organic butter - softened

1/2 cup organic coconut sugar

1 - 1 1/2 tbsp. organic Ceylon cinnamon

Glaze for pan:

1/2 cup organic butter

2/3 cup organic coconut sugar

3 oz. chopped pecans

Note: If you want pecans in the filling, then you will need

8 oz. of pecans.

10 inch round ceramic or glass pan - handles are helpful

plate that will cover this pan - a lip on the edge helps

Preheat oven to 375 degrees

For the glaze, butter the sides of the pan and then add the rest of the butter evenly over the bottom. Sprinkle the coconut sugar and pecans over this.

Prepare the dough in a food processor. Place the flour, baking powder, and salt in and pulse twice. Then add in the butter and coconut oil and blend til it becomes crumbly. Add the vinegar to the ice water and pour in, while the processor is blending. This will form a soft, moist dough.

Turn out onto a slightly floured surface. Knead a couple of times to form a smooth ball and then roll out into a large rectangle with about a 1/4 inch thickness.

Spread the butter of the filling ingredients onto the dough evenly.

Then sprinkle the cinnamon and coconut sugar on. Start from the far side away from you and roll the dough towards you. Roll on the seam to seal it. Then cut into even portions. Place the bun portions into the pan.

Bake for about 20 - 25 minutes.

Remove the pan and let sit for about 1 minute on a hot pad. Then take the plate and place over the top of pan. Using 2 hot pads,to hold the pan and plate together, carefully, quickly flip the pan and plate upside down and

then sit the plate onto the hot pad.

Let the pan sit on the plate for about 5 minutes. Then remove the pan and using a rubber spatula, wipe the remaining glaze into the sticky buns.

Serve warm. Enjoy!
