Artichoke & Spinach Dip With Rosemary Romano Crackers
Perfect for a party! Enjoy dipping these delicious
rosemary and Romano cheese crackers into the rich
garlicky, cheesey artichoke and spinach dip.
Recipe Prep 1 hr. 15 min. Serves 8 - 10
Crackers (approx. 40 crackers):
1 1/2 cups organic whole wheat flour - chemical free
3 tbsp. organic flax - freshly ground
3 tbsp. organic fresh rosemary - finely minced
1/3 cup organic extra virgin coconut oil
1/2 cup organic cold butter
1 tsp. organic black pepper - freshly ground
2 tsp. Himalayan salt
Dip:
2 cans (14 oz each) organic artichoke hearts
1 1/2 cups organic spinach
1 cup organic sour cream
1/2 cup Vegannaise mayonnaise - soy free
2 - 3 cloves organic garlic - minced
2 1/2 cups quality Havarti cheese - grated
2 cups quality Romano cheese (Italian) - grated
2 tbsp. organic extra virgin olive oil
2 tbsp. organic chives
2 tsp. Himalayan salt
2 tsp. organic ground coriander
1 tsp. organic lemon pepper
1/4 tsp. organic white pepper
Organic smoked paprika - to sprinkle on top
Preheat oven to 350 degrees. Place parchment paper onto
2 baking sheets
Casserole dish - I used a 10 inch diameter with 1 1/2 inch depth.
Prepare crackers by placing the butter and flour together in a food
processor and blend. Add in the rest of the ingredients and blend.
Remove to a lightly floured surface and work the dough a little to
bring it together.
Then place onto a piece of saran wrap and place in the refrigerator
for about 30-40 minutes.
Place artichokes in a food processor and blend well. Add all the
other ingredients and blend. Pour into a casserole dish.
Sprinkle with smoked paprika. Bake for 30-35 minutes.
Remove and place onto the slightly floured surface again. Work
with the dough a little to warm it up and then roll it out to about
a 3/16 thickness. Use a round cutter with about a 1 3/4 inch
diameter to cut out the crackers. Place onto the baking sheets.
Raise the oven temperature to 375 degrees.
Bake near the top of the oven for 10 - 15 minutes and then turn
over and bake for another 5 minutes. Enjoy!
