Oatmeal Apple Raisin Cookies
Traditional with a little extra flavor and nutrition.
Recipe Prep 1 hr and 15 min Yields approx. 5-6 dozen
2 cups organic butter - softened
2 1/2 tsp. Himalayan salt
1 tbsp. organic vanilla extract
1 tbsp. organic Ceylon cinnamon
1 cup raw honey
2 1/2 cups organic coconut sugar
4 pastured or organic eggs
3 1/2 cups organic rolled oats
3 1/2 cups organic whole wheat flour - chemical free
2 tsp. baking soda
3 medium organic apples - chopped - Fuji or Pink Lady
12 oz. organic raisins
Pour hot water over the raisins and let sit as you put together
the dough.
Note: You do not want hard raisins, so this will impart moisture
into them and keep them moist while they back.
Place parchment paper on two large stainless steel baking pans
Preheat oven to 375 degrees
In large mixing bowl, add the first 6 ingredients and blend. Add in the
eggs and mix well. Add in the flour and baking soda.
Finally add in the apples and raisins and incorporate well.
Drop by spoonfuls (your choice of size) onto the parchment lined pans.
Bake for 10-12 minutes. Enjoy!
