Zesty Potatoes
We love these! Ideal for an appetizer, side dish, or even
the main entree. Seasoned roasted potatoes topped with
a special sauce and quality cheddar cheese.
Recipe Prep 45 min. Serves 8
5 lbs. organic red potatoes - cubed
3/4 cup organic extra virgin coconut oil
2 tsp. organic garlic powder
1 1/2 tsp. organic smoked paprika
1 tsp. organic ground cumin
1 tsp. organic lemon pepper
3/4 tsp. organic chili pepper
Himalayan salt
Sauce:
16 oz. organic sour cream
3 tbsp. organic mustard
5 tbsp. organic horseradish sauce * see my recipe *
2 tbsp. organic chives
2 tsp. Himalayan salt
3/4 tsp. organic lemon pepper
1 1/2 cups English or Irish cheddar cheese - grated
6 organic green onions
Preheat oven to 425 degrees.
In a large mixing bowl, add the coconut oil, all the seasonings,
except the salt, and then the potatoes. Mix well and then pour
out onto a large stainless steel sheet pan. Grind the Himalayan
salt over the potatoes - according to your taste.
Bake for about 35 - 40 minutes. Until fork tender.
In the meantime, in a smaller bowl, mix all the sauce ingredients.
Diced the green onions, but put the green parts in one bowl and
the white parts in another one.
When the potatoes are done roasting. then sprinkle the white onion
parts over the potatoes, then drizzle the sauce over them, then sprinkle
the cheese. Place back into the oven for 5 minutes for the sauce to
warm and the cheese to melt. Remove and sprinkle the green parts
of the onions on top. Serve. Enjoy!
