Pineapple Teriyaki Chicken Rice Bowl
Feast with your eyes first and then savor every bite.
Moist, tender chicken, pineapple, and tasty vegetables layered on basmati rice and drizzled with a tangy teriyaki sauce.
Recipe: Prep: 3 hours Serves 7-8
1 whole organic chicken - skinned
2 1/2 cups organic brown basmati rice
5 cups organic chicken broth
1/4 cup organic extra virgin coconut oil
16 oz. organic frozen broccoli - steamed
1 1/2 cups organic pineapple chunks - halved
1 1/2 cups organic shredded carrots
optional: organic green onions - diced
1/2 cup organic cilantro - minced
Teriyaki sauce:
1 cup organic soy sauce
1 cup organic pineapple juice
3/4 cup organic coconut sugar
3 tbsp. organic apricot or peach jelly
2 tsp. organic fresh minced ginger
1 tsp. organic fresh minced garlic
1 tsp. organic ground coriander
3-4 tbsp. organic cornstarch - Let's Do Organic or Rapunzel
& a little water for a slurry
Place chicken into crock pot, fill with water and cook on high for 2 hours.
When chicken is done, pull out the broth and skim fat off top.
Keep chicken in crock pot with lid to keep warm.
Measure 5 cups of broth for rice and save the rest for a future use.
Add coconut oil to a sauce pot with a clear glass lid.
Rinse rice really well and add to pot. Add the broth and cook until
all the broth has been absorbed and no bubbles can be seen.
Tip: Rinsing rice well will prevent stickiness. Not overcooking will
also prevent this, so be sure to keep an eye out for the obvious signs
of no more bubbles at the top of rice.
Using a clear glass lid allows you to check the rice without lifting
the lid.
In a small sauce pot, add all the teriyaki ingredients and cook until
all is thoroughly blended and heated well. Some steam will be seen.
Then whisk in the cornstarch slurry, until it thickens.
Note: Start with using only 3 tbsp. of cornstarch and if the sauce
does not thicken up enough, then add the extra tbsp.
When rice is done, then pick the chicken meat.
Tip: Place the bones back into the crock pot, add some garlic cloves,
several halved onions and several small stalks of celery. Pour in just
enough water to cover - about 1/3 of the pot - and cook on low overnight
for about 12-18 hours.
This makes great collagen - very healthy to drink or use in rice, quinoa,
millet, couscous, soups, sauces, etc. Great to combat colds and flu!
Scoop some rice into a serving bowl, then place chicken, pineapple,
and vegetables on the top. Drizzle with teriyaki sauce and then
sprinkle with cilantro. Enjoy!
