Fruity Cheese Crumb Bars
A step above a crumb cake. Rich and creamy with a touch
of fruit flavor and a crumbly streusel texture finish.
Recipe: Prep: 1 hour Serves: 12
Bottom crust:
2 organic or pastured eggs
1 cup organic butter - softened
1 cup organic coconut sugar
1 1/2 cups organic shredded coconut (unsweetened)
2 cups organic whole wheat flour (chemical free)
1 tsp. baking soda
1 tsp. Himalayan salt
2 dashes of organic vanilla
Filling:
2 packs (8oz.) organic cream cheese
2 organic or pastured eggs
2 tbsp. organic whole wheat flour (chemical free)
4 tbsp. organic butter - softened
1/2 cup organic coconut sugar
5 oz. organic fruit jelly (sugar free)
dash organic vanilla
Streusel:
1 cups organic coconut sugar
1/2 cup organic whole wheat flour (chemical free)
3 tbsp. organic butter - softened
2 stainless steel pans - 11 x 7 - liberally buttered
In food processor, add the streusel ingredients and blend well.
Put into a bowl and set aside. Wipe food processor out with paper towel.
In mixing bowl, add the eggs, coconut sugar, vanilla, salt, and butter
and mix well. Add the coconut, flour, and baking soda and mix well.
Using a rubber spatula, carefully spread a layer into each pan.
In food processor, add cream cheese and blend. Then add eggs, vanilla,
and butter and mix well. Add flour and coconut sugar. Mix well.
Spread on top of crust mixture in pans.
Stir jelly with a spoon in jar to make it smoother to spread. Then drop by
dollops on a zig zag pattern on top of cheese mixture. Then use spoon to
swirl through.
Then sprinkler the crumb topping onto the cheese topping.
Bake for about 30 minutes. Let cool. Enjoy!
