Northern Medley
Grilled chicken, roasted red peppers, garlic, spinach, northern beans, and parmesan cheese - what a medley of colors and flavors!
Recipe: Prep: 30-40 minutes Serves 8
3 organic boneless/skinless chicken breasts
2-3 tbsp. grape seed oil - expeller pressed
5 cans 15.5oz organic northern beans
1 large organic onion - diced
16oz jar of organic roasted red bell peppers - diced
16oz organic frozen spinach
1 cup parmesan cheese - freshly grated
4-5 organic garlic cloves - minced
1/4 cup organic red wine vinegar
3 tbsp. organic soy sauce
2 tbsp. organic smoked paprika
2 tbsp. organic dried basil
1 tbsp. organic dried thyme
2 tsp. organic ground coriander
2 tsp. organic lemon pepper
2 tsp, Himalayan salt
Prep grill. Put chicken into a bowl and add the oil and mix well.
Place chicken on the grill and cook until done - depends on the size
of your chicken breasts - approx. 12 - 15 minutes.
*Remember - do not use a grill fork to handle or turn chicken, use
grilling tongs*
When chicken is done, place onto a cutting board and cover with
a lid or dish and let rest for 10 minutes.
In the meantime, in large stainless steel skillet, cook spinach on
medium heat. Drain beans and add them with the onion, peppers,
garlic, and vinegar, soy sauce, and all the seasonings to the spinach.
Stir thoroughly and heat through.
Slice chicken and then cut into 1 inch pieces and add to the skillet and
stir through. Then add 3/4 cup parmesan cheese and stir through and
then sprinkle the last 1/4 cup across the top. Enjoy!
