Tomato Delight!
This is a side dish just popping with flavor! And yet it is very simple to put together.

Recipe:
2 organic ripe tomatoes 1 stalk of basil
2 tbsp. Parmesan cheese organic Balsamic vinegar
Avocado oil (unrefined, cold pressed) OR 100% extra virgin olive oil
lemon pepper Himalayan salt or sea salt
Slice the tomatoes and place on plate. Just lightly do a drizzle of the oil and then the vinegar on top of the tomatoes.
Tip: I put my thumb slightly over the top of the jar to allow a small amount to come out of the oil and vinegar.
Sprinkle the Parmesan cheese on top of the tomatoes.
Tip: Do not use store bought Parmesan cheese that is sold in the canister in the pasta isle. Use freshly grated or buy a piece of the cheese and grate it yourself. The real thing with the real flavor and nothing extra added!
Place basil leaves on top of each other on a cutting board and then
roll them into a tube and slice them thinly and then halve them. Sprinkle on top of the tomatoes.
Add the pepper and salt to your taste. Enjoy!
